Fried Prawns With Pineapple
Ingredients (A)

500gm medium-size prawns, remove shell and de-vein.
200gm canned pineapple cubes.(keep the juice for seasoning)
60gm celery stalk diced.
10 slices of carrots.
5 cups Neptune cooking oil.
1 tbsp finely chopped garlic and red onion.
1 tsp cooking wine (Chew Heng Wine)
Marinade for Prawns (B)
1 tsp egg white
1 tbsp corn flour
1/2 tsp salt
Dash of pepper
Seasoning (C)
2 tbsp canned pineapple juice
1/2 tsp concentrated chicken stock
1/2 tsp sesame oil and dash of pepper
1/2tsp corn flour

Fried Prawns With Pineapple

Method
1. Clean the prawns with corn flour and salt, then wash with water, dry with clean cloth and then marinate with (B).
2. Heat Neptune cooking oil and fry the prawns for 1 minute. Set aside.
3. Saute the chopped garlic and red onion in 1 tbsp Neptune cooking oil until fragrant. Add diced celery, carrots and fry for 1/2 minute.
4. Add (C) and stir fry till well-mixed. Then add in the cooking wine. Dish uo and serve hot.


Neptune Fried Bean Curd Special
Ingredients (A)

3 pcs smashed soft bean curd.
150gm chicken meat finely chopped.
3 eggs.
1 tbsp crip-fried shallots.
3 dried mushrooms, soaked and cut into small pieces.
5 cups Neptune cooking oil

Neptune Fried Bean Curd Special
Seasoning (C)
1 tsp salt
1 tbsp sesame oil
1 tbsp corn flour

1 tsp concentrated chicken stock
1/8 tsp pepper

6 tbsp flavoured flour for frying chicken (C)
Method
1.
Mixed all ingredients (A) except cooking oil with seasoning (B).
2. Pour into square baking tray (Coated with Neptune oil) measuring 17 1/2cm and steam for 20 minutes until cooked.
3. Set aside and cut it into square pieces when cool.
4. Coat the square bean curd with flavoured flour (C) and fry until golden brown.
5. Drain and arrange on serving dish. Serve with chilli sauce.
